Ingredients:

1 package of Authentic Foods Lemon Cake Mix

2 eggs

� cup light olive oil or vegetable oil

Directions:

Preheat oven to 350 degrees Fahrenheit.  Grease a large cookie sheet with cooking spray.

In a medium size bowl, combine Authentic Foods Lemon Cake Mix, 2 eggs and � cup oil until fully combined.  Using a tablespoon or ice cream scooper, place tablespoon size balls onto the cookie sheet, at least 1 � inches apart.  Slightly pat down the balls. 

Place the cookie sheet in the oven for 8 – 10 minutes or until slightly golden brown.  Cool the cookies on a rack for at least 10 minutes.  Decorate as you would like with melted chocolate or powdered sugar.
