Authentic Foods Vanilla Cake Mix


Large Eggs

1 Cup



Unsalted Butter, softened


Medium Strawberries

1 1/2 Cup

Heavy Whipping Cream

1 1/2 TSP

Vanilla Extract (1/2 TSP Vanilla Powder)


Powdered Sugar


1. Preheat the oven to 350 F. Line a standard cupcake pan with 12 liners and set aside.

2. In a bowl combine the eggs and milk until well blended.

3. In a separate bowl, blend the Vanilla Cake Mix and the butter using the paddle attachment of your electric stand mixer.

4. Add half of the egg mexture and blend evenly at low speed. Add the remaining egg mixture and blend until smooth and light. The batter should have the consistency of a custard.

5. Divide the batter evenly into 12 cupcake liners.

6. Bake for 20-30 minutes, until a toothpick inserted in the center comes out clean. Let them cool in the cupcake pan for at least 10 minutes then transfer to a rack to cool completely.

7. Once cooled, use a sharp knife to hollow out the center of the cupcake and insert the strawberry inside.

8. To make the frosting, pour the heavy cream into the bowl of your electric stand mixer and whip until soft peaks form. Then add the powdered sugar and vanilla powder. Continue mixing on high speed till stiff peaks form.

9. Pipe the frosting on cooled cupcakes that have the strawberry inserted.
