Molasses Cookies

1 1/2 cups granulated sugar

1 cup organic shortening

1/2 cup molasses

1/2 cup cold coffee

3 3/4 cups Authentic Foods Multi-Blend Flour

1/2 teaspoon Authentic Foods Xanthan Gum

2 teaspoons baking soda

1 teaspoon ground cloves

1 teaspoon ginger

1 teaspoon cinnamon

Granulated Sugar


Preheat oven to 375 degrees Fahrenheit.

Cream sugar and shortening on high speed until pale in color and light in texture.  Add molasses and coffee, mixing well.  In a medium bowl, combine Authentic Foods Multi-Blend Flour, Authentic Foods Xanthan Gum, baking soda, cloves, ginger and cinnamon.  Slowly add flour mixture to molasses mixture until well incorporated.  Chill dough for 20  minutes. 

Roll cookie dough into balls the size of walnuts and dip one side into sugar.  Place sugar side up on a parchment lined baking sheet.  Bake for 7 minutes.

Notes: These cookies make a great cheesecake crust.  If using a standard gluten free flour blend, add 1/2 teapoon xanthan gum to the dry ingredients.
