1 cup Authentic Foods GF Classical Blend

¼ teaspoon Authentic Foods Xanthan Gum

1 teaspoon baking powder

½ teaspoon baking soda

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon ground allspice

¼ teaspoon ground cloves

¾ cup diced mixed candied fruits and peels

½ cup raisins or chopped pitted dates

½ cup candied red or green cherries, quartered

½ cup pecans or walnuts

2 eggs

½ cup packed brown sugar

½ cup orange juice or apple juice

1/3 cup butter, melted

2 tablespoons brandy

Cheesecloth (100% cotton)



Preheat oven to 300 degrees Fahrenheit.  Grease a 9” x 5” inch bread ban and set aside.


In a large mixing bowl, combine Authentic Foods GF Classical Blend, Authentic Foods Xanthan Gum, baking powder, baking soda, ground cinnamon, ground nutmeg, ground allspice, ground cloves, diced mixed candied fruits and peels, raisins, cherries and nuts until fully combined. 


In a medium size bowl, beat the eggs.  Then add in the brown sugar, orange juice, butter and brandy.  Add this mixture to the flour mixture and mix until thoroughly combined.  Add the batter to the greased bread pan. 


Bake in the oven for 60 to 90 minutes or until a toothpick comes out clean when poked into the center of the cake.  Let the cake rest for at least 15 minutes. 


Then turn the cake over and cover the cake with cheesecloth moistened with brandy or fruit juice.  Cover the bread and cheesecloth with aluminum foil and store in the refrigerator for 2 to 8 weeks to calm strong flavors.  Moisten the cheesecloth as necessary.
