  1. Pre-heat the oven to 350F or 325F convection. Mix Authentic Foods Steve’s GF Cake Flour, Authentic Foods Almond Meal, baking powder, baking soda, salt, and ground cinnamon together and set aside.
  2. In a separate bowl, whisk together eggs and sugar. Then whisk in oil until emulsified. Stir in carrots, walnuts, and raisins.
  3. Fold in dries and mix until evenly incorporated.
  4. Divide half the batter between 12 muffin liners, place a piece of cream cheese into each then top with the remaining batter.
  5. Bake approximately 25 minutes at 350F still or 325F convection until center springs back when pressed.
