62g (1/4 Cup) |
Granulated Sugar |

Cocoa Powder, sifted |

Mini Chocolate Chips (optional) |
Directions:
- In a bowl, mix together the Authentic Foods Steve’s GF Cake Flour Blend, sifted cocoa powder, and baking powder.
- Using an electric stand mixer with the paddle attachment, cream Butter and Sugar until just incorporated.
- Mix in egg white and peppermint extract and mix till combined.
- With the mixer on add in dry ingredients and sprinkle in water till well combined.
- Add chocolate chips if desired and mix till dough forms.
- Either roll between 2 sheets of parchment for cut out cookies or roll into a log.
- Chill the dough well before baking. Bake 350 till the dough fells firm when pressed.
