Chocolate Peppermint Sugar Cookies

105 g (5/8 Cup)

Authentic Foods Steve’s GF Cake Flour Blend

78g (6 TBSP)

Butter, room temp

62g (1/4 Cup)

Granulated Sugar


Egg White, room temp

1/2 tsp

Peppermint Extract

20 g (3 TBSP)

Cocoa Powder, sifted

1/8 tsp

Baking Powder

1/8 tsp


2 1/2 tsp

Water, room temp

1/3 cup

Mini Chocolate Chips (optional)


  1. In a bowl, mix together the Authentic Foods Steve’s GF Cake Flour Blend, sifted cocoa powder, and baking powder.
  2. Using an electric stand mixer with the paddle attachment, cream Butter and Sugar until just incorporated.
  3. Mix in egg white and peppermint extract and mix till combined.
  4. With the mixer on add in dry ingredients and sprinkle in water till well combined.
  5. Add chocolate chips if desired and mix till dough forms.
  6. Either roll between 2 sheets of parchment for cut out cookies or roll into a log.
  7. Chill the dough well before baking. Bake 350 till the dough fells firm when pressed.
